The Pyrenees is a cool climate region where the cool nights and warm days help our Pinot Noir vines thrive and produce a uniquely deep flavoured wine. Our Pinot is sourced from a small block of 30 year old vines, the oldest planted at Peerick. The fruit is hand-picked and wild yeast fermented over 14 days before being gently hand pressed and aged on 20% new French oak.
